One of the great benefits of the ever popular Oreo cookies is using it in baking and a cookies and cream cake is one of the most popular recipes. As beautiful as it is sinful, a cookies and cream cake makes an impressive dessert whether it’s for a party, a pot-luck, or a bake sale!
It’s easy to make a cookies and cream cake and the amount of labor depends on how much time you’re willing to spend on it—or how much you love to bake! If you are pressed for time or just have a life too busy to spend much time in the kitchen, you can use a boxed cake mix. Of course, chocolate is traditional in a cookies and cream cake but you can be creative without being a master baker. A lemon cake mix makes a beautiful cake and an interesting flavor combination. German Chocolate complements the cookies well while a fudge cake will make it even more decadent.
Assuming you want to make your cake from scratch, you’ll start by mixing:
1 1/4 cups Flour
2/3 cup cocoa powder
1 1/2 tsp Baking Soda
1/2 tsp Baking Powder
1/2 tsp Salt
3/4 cup Unsalted Butter
1 1/2 cups Sugar
1 tsp vanilla
3 large eggs at room temperature
1 1/4 cups Buttermilk
If you want a healthier cookies and cream cake you can use light margarine rather than butter and 1 ¼ cup skim milk with a tablespoon of lemon juice in place of the buttermilk. Replacing the sugar with Stevia, a natural low calorie sweetener, will produce a lower calorie cake with all the flavor of the original version. Pour the batter into two 8” round cake pans that you’ve buttered and floured so the cake won’t stick and bake it at 350° for thirty minutes or until a toothpick inserted into the middle comes out dry.
The frosting for your cookies and cream cake is easy to make from 8 ounces of room temperature cream cheese, ½ cup sugar, one cup heavy whipping cream, and two dozen chopped up Oreo cookies. Once the cake has cooled you can spread the frosting between the layers and atop the cake. If you want your cake to look its best you should invert the bottom layer so that its top lays on the plate and the two flat bottom halves fit together with a layer of frosting between them.
A cookies and cream cake is as beautiful as it is delicious, especially if you use whole Oreos placed on their ends to decorate the top layer. Mint Oreo cookies will add a refreshing twist to this recipe and if you want it even fancier you can drizzle chocolate syrup over the top.
If you don’t want to make your own frosting, a cookies and cream cake is almost as tasty when you use canned frosting. In fact, if you’re making it with Mint Oreo cookies you can use mint icing or add a few drops of peppermint oil to white frosting.
